Paleo Chicken Schnitzel

Okay I’ve been experimenting with how to get my kids to eat more veges (still trying this) and I made up a recipe on the spot as I was hounded by starving children into the kitchen.

Paleo Chicken Schitzel

5 chicken thigh fillets (flattened/pounded thin, with accompanying laughter from kids at my efforts to slay chicken meat)

1 1/2 cups of almond meal (to coat the chicken)

3 eggs (mixed)

pinch of salt

Flatten the chicken thigh fillets using a mallet or the back of a big knife. Once you’re happy that they’re thin enough dip the fillets in egg/salt mixture, then quickly transfer to the bowl containing the almond meal. Coat thoroughly and place in a moderate frypan that has been lightly seasoned with oil.

Cook on one side for 8 minutes, turn and cook the other side for 8 minutes. (Time will vary depending on how thin you get your schnitzels)

Serve with steamed veges or salad.

My kids loved the schitzels, even fussy boy ate everything on his plate. We’ll be bringing this recipe out again.
