Paleo Birthday Party.

Happy birthday to our eldest child – 17 today! A senior in high school and ready to fly the coup soon (which both hubby and I aren’t ready for).

I asked her what she wanted for her birthday lunch, she replied emphatically “The family stuffing”… there is a recipe handed down through at least four generations of my family for chicken stuffing created for roast chicken. I love it. It reminds me of my mother and grandmother. So I came up with a way to keep it all gluten free (made some more gluten free bread) and Paleofied the party.

We had roast chicken with stuffing; Cauliflower Tabouli; and roast pumpkin salad (with cashews,  avocado, tomatoes and lettuce). Following that we had an Orange and Chia Seed cake (gluten free) and Vanilla and Chocolate Paleo Ice-cream.

The verdict? Loved it! So glad she was happy.
